Changing Concepts: Quick, Nutritious Recipes That Taste Divine

It's hard to believe, but it's the second day of March and I'm looking at snowflakes swirling past my window. I've had to alter my concept of spring since my husband, Randy and I started the restoration and renovation of our historic home in Breckenridge, Colorado last spring. Despite frequent trips back and forth between Texas and Colorado - in many cases between lush green grass and snow-covered acreage - I still conjure up images of spring flowers and swelling buds on trees waiting to burst forth when March arrives.
My concept of daily cooking has had to change as well. Although I've always led a rather hectic existence, juggling my home life with deadlines, television appearances, writing projects, and travel, I've learned during the past 11 months what busy really means. Jam-packed mornings in my living room "office", followed by afternoons at Swan's Nest's construction site have necessitated quick meal preparation each evening. And yet, I haven't sacrificed nutrition, taste, or visual appeal while striving to get our meals on the table, as each of these elements is important to our health and emotional well-being.
I'm happy to announce my newest cookbook, Where's My Spatula? Fast, Healthy Meals When Your Kitchen or Your Life Is A Mess is currently at the printer and will be available at bookstores across the country later this spring. This book is a direct result of Randy's and my crazy lives this past year.
