Feeling Blessed

My suitcase is packed and soon, my husband Randy and I will depart for our little place in the Colorado mountains to celebrate Thanksgiving. A couple of years ago, we spent our first Thanksgiving holiday there and discovered what a peaceful, lovely place the mountains can be in November. I shipped our pre-cooked Thanksgiving turkey, a container of frozen cornbread dressing, a can of cranberry sauce, and a can of green beans all packed in ice under the plane. Since we traveled on Thanksgiving Day, our dinner was ready almost as soon as we arrived in the mountains!

This year, we’re leaving a few days earlier. In the condo freezer waits our 23-pound turkey and a container of Sweet Potatoes Supreme I made a few weeks ago. Randy and I have been traveling back and forth between Texas and Colorado quite a bit lately, thanks to the recent purchase of a beautiful historic home and property, with the most breathtaking view of majestic mountains. It’s a dream come true, and we feel very blessed.

You’ll hear more about our new home as the months pass. We have grand plans for restoring this historic structure and transforming it into the gracious manor it was in 1898. To reach that point, we have many months of extensive research and work ahead of us, and we plan to enjoy the process. No doubt, my repertoire of recipes will be influenced by both the location and history of our new home.

As we celebrate Thanksgiving with our new Colorado next door neighbors, Liz and Al, our hearts will be filled with gratefulness for our many blessings – our family, friends, good health, and our new home. May it be a time of joy for you as well, and may you receive many blessings.
