Make It Fresh!
By Christy Rost, April 2006
I love spring when everything is so fresh. In my gardens, tender new shoots of plants that slept through the winter push through soil that is warmed by the sun and moistened by cool rain showers. Indoors, rooms are refreshed by cool breezes that rush through open windows, fluttering curtains as they pass and bringing along the music of birds and rustling leaves for added enjoyment.
These traditional harbingers of spring rejuvenate my body and spirit with renewed energy after months of quiet cocooning. They nudge me into repeated visits to nearby nurseries in search of fresh flowers for my gardens, and the farmer’s market and produce sections of my supermarket in search of fresh fruits and vegetables for our table.
Longer days, mild weather, and gentle breezes force me to change gears in the kitchen every spring. Just as I look forward to the aromas of slow-cooked roasts, stews, and soups in the fall, I’m enchanted in the spring by the prospect of putting these recipes away and creating quick, light meals with the freshest produce I can find. Colorful salads, quickly-sautéed vegetables tossed with toasted nuts and garlic, and the joys of rediscovering grilled seafood, grilled vegetables, and cold pasta salads provide a level of excitement akin to unwrapping a gift.
For cooking with the freshest ingredients is a gift – to yourself and to those you care about. Not only is it a healthy and flavor-packed approach to eating, but quick-cooking with fresh produce means less time in the kitchen and more time to enjoy life. Throughout the coming months, you’ll find delicious inspiration at easyentertain.com to eat fresh. So gather your friends and family, and celebrate the arrival of spring!
