Springtime Hawaiian Dinner

As the days grow longer and daytime temperatures begin moderating, I'm enjoying watching my neighbor's yellow daffodils bob their cheerful heads in the breeze. The early signs of spring in Texas are here and it won't be long before tree buds swell overhead and provide a delicate, lacy pattern of new pale green leaves.

Naturally, my thoughts turn to entertaining ­ particularly the outdoor version. With garden beds bursting with colorful pansies and the ever-present mystery of tender perennials about to be revealed, I long to return to the outdoors, and planning outdoor gatherings feels fresh and exciting after months of living indoors.

This month's Hawaiian recipes set the stage for a relaxed, but grand Polynesian celebration of spring's arrival. Hawaiian food presents the opportunity to capitalize not only on the flavors of the Islands, but their beauty and culture. Select a warm, early spring afternoon, and invite friends over for Barbecued Hawaiian Pork Ribs with Sweet, Hot, and Sour Sauce. While the grill heats, serve guests frosty glasses of Banana Coladas, garnished with chunks of fresh pineapple and banana, or this month's other featured cocktail, the fruity, blush-colored Passion Fruit Island Sunrise.

Move a table out under the trees and cover it with table linens in colors reminiscent of Hawaii ­ turquoise for its sky and the sea, coral and pink for its sunsets, and bright lime greens and yellows for its tropical plants and flowers. Create a beautiful, but economical centerpiece using tropical greenery, flowers, and fruit such as kiwi, mango, and papaya. Slice the papaya open to reveal its fascinating, sunset-hued interior and glistening black seeds. Hang leis over the back of each chair for an added touch of fun.
