Frozen Mojito

Mojitos are all the rage in cocktail lounges this summer. Serve my Frozen Mojito at your next gathering and join the ranks of trendy party hosts. For added glamour, pour it into retro cocktail or martini glasses rimmed with clear sparkling sugar.

Ingredients:

8ounces frozen limeade
6ounces white rum
2tablespoons granulated sugar
¼cup mint leaves, stems removed and densely packed
3 to 4cups ice cubes
1 lime wedge, for garnish
sparkling sugar, for garnish
mint leaves, for garnish

In a blender, combine limeade, rum, sugar, and mint leaves. Pulse the mixture several times to mix. Add ice cubes and blend until the mixture is smooth and the mint is finely chopped.

Rub the rims of the glasses with the lime wedge and dip them in a plate of sparkling sugar. Pour in the cocktail mixture and top garnish with mint leaves.

Recipe makes 6 to 8 cocktails.
