
| 3 | large onions, peeled and sliced | |

| 2 | pounds ground sirloin or ground chuck | |
| 1 | 8-ounce jar roasted red bell peppers | |
| 4 | ounces blue cheese | |

| 4 | kaiser rolls or hamburger buns |
Heat a large skillet over medium-low heat, add olive oil, and swirl to coat the bottom of the pan. Add the onions and sauté them, stirring occasionally, until they are golden brown, about 25 minutes.
While the onions sauté, preheat the grill. Form ground sirloin into eight 5-inch patties, about ¼-inch thick. On 4 of the patties, place a large strip of roasted pepper and several slices of blue cheese in the centers. Cover each of the burgers with the remaining patties, pressing the edges well with your fingers to seal in the peppers and cheese. Season the burgers with salt and pepper.
When the grill is hot, cook the burgers over medium heat 4 minutes on each side. Turn the burgers over and cook 3 minutes more on each side, or until burgers are cooked to desired degree of doneness.
Place burgers on Kaiser rolls or hamburger buns and top with caramelized onions.
